Re: Thinking of building a smoker

Our family built a 'cold' smoker about 10ft high shaped in a 'D'. It had a 2x4 frame with the flat front covered with plywood and the curved sides and back out of corrugated metal roofing. The top was also covered with the corrugated material, but there was open spacing left around the perimeter to allow the smoke to escape. There were several sliding racks accessed by a small door at the top of the flat front. The fire was accessed by another small door with a adjustable draft at the bottom of the flat front. It worked very well for several years, smoking salmon, trout, and whitefish, until my youngest brother piled too much wood on the fire and left the draft open. The creosote lined walls sure made a fantastic inferno, kinda burnt the salmon a bit.

Most oldtime smoke houses were not lined: If you use a heavy enough cladding and wet down the sides before you smoke you should have no problems fire wise:
How fancy are you thinking? are you going to bring in a 110 volt outlet for an electric heat source or are you thinking a fire box?
