smoked venison roast on the bbq

a couple of weeks ago we decided to try something new on the bbq as people need to know by now a bbq isnt just for grilling anymore, it can be used for many ways of cooking

we took a 2 lb moose roast and deceided to give bbq smoking it a try

make about 5 foil packs holding 1 cup od presoaked smoking chips poke a couple fork holes into the foil for smoke to escape (favourite flavour) we happend to use apple this particular try

heat up only one side of the bbq to 375-400 degrees and get 1 pack of the chips smoking

place roast on cold side of bbq with your special seasonings you like on your roast

when you get a decent smoke going close the bbq lid and let the process begin, when you see smoke go down from bbq replace with a new foil pack

this process taks about 3.5 hours to get a nice smoke flavour for a rare roast to medium rare

we served, cajun prawns, cesaer salad, portebello grilled mushrooms, bbq baked potatoes and french bread with this roast

was an amazing new way to enjoy a moose roast

left overs made a beautiful moose dip with au jus sauce - adding a unique smokey blend to an old fashioned french dip

I do roasts, ribs, briskets and chicken in a similar manner, but I just put an old pan of wood chips out, don't bother with the foil packets. I also will put a pan of tomatoes in with the meat for the last hour or 2, and smoke them to make a homemade tomato BBQ sauce. It's a great way to use a grill.
