    VENISON MEAT LOAF

    2 eggs
    1 can (8 ounces) tomato sauce
    1 medium onion, finely chopped
    1 cup dry bread crumbs
    1-1/2 teaspoons salt
    1/8 teaspoon pepper
    1-1/2 pounds ground venison
    2 tablespoons brown sugar
    2 tablespoons spicy brown mustard
    2 tablespoons white vinegar

    In a large bowl, lightly beat eggs; add tomato sauce, onion, crumbs, salt and pepper. Add venison and mix well. Press into an ungreased 9-in. x 5-in. x 3-in. loaf pan. Combine brown sugar, mustard and vinegar; pour over meat loaf. Bake, uncovered, at 350° for 70 minutes.

    Another simple Venison Meat Loaf

    2 pounds ground venison
    4 slices fresh bread
    1/2 cup water
    1 medium onion, chopped
    1 tbsp. salt
    1/4 tsp. pepper
    2 eggs

    1 cup chili sauce, barbecue sauce, or ketchup
    Soften bread in water and add onion, salt and pepper, eggs, and 1/2 cup sauce or ketchup. Mix well, make into 1 or 2 loaves and place in greased baking dish. Bake at 375 degrees F. for 45 minutes to 1 hour. After 30 minutes cooking time, cover loaves with remaining sauce or ketchup and continue cooking until done.

    A Little More time Venison Meat Loaf

    2 lb ground venison
    1/2 lb ground beef
    1 tbsp. butter or margarine
    1/2 cup minced onion
    1/4 cup minced celery
    2 eggs
    1 cup quick oatmeal
    1/2 cup sherry, red wine or milk
    2 tsp. salt
    1 tsp. pepper
    1 tbsp. sugar
    1/2 tsp garlic powder
    1/2 tsp thyme leaves
    1/2 tsp oregano leaves


    About 2 hours ahead or early in day: Preheat oven to 350 degrees. In 8-inch skillet over medium heat, in hot butter or margarine, cook onion and celery until tender, about 5 minutes. Meanwhile, in large bowl, with fork, beat eggs, slightly. Stir in bread crumbs and all other ingredients. Add venison, beef and onion mixture; mix well. Place mixture in 9x5" loaf pan and bake 1 1/2 hours. Pour off pan juices. Serve hot or cold.

    Add horseradish to any recipe and really dig it...

    Pretty simple really:
    -get a pile of ground game meat the size of your head
    -gather some spices, eggs, bread crumbs and horseradish, mix in with your hands
    -mold into the shape of a Grizzly Bear turd
    -bake in a 375 oven until done
    -let the mound cool, place in the fridge overnight
    -next day cut into .5 inch slabs, place on fresh bread with your favourite toppings
    Meatloaf sandwiches are to die for.
