    Newfoundland fish cakes

    Ive had these a bunch of times and never had a bad batch, but every baymen makes them different. I had one of “da byes” show me how to make them last night so I figured I’d share it with you west coast Newfies. I think the ratio of potato/cod and pork/onion mix can be adjusted to suit your own taste and cod could easily be substituted with crab, halibut, or anything else that flakes up nice. Here you go.

    Equal parts cod to potatoes
    Equal parts onions to pickled pork fat back
    Salt and pepper to taste
    Fry oil
    Flour


    -Finely dice pork fat and fry on low-medium heat
    -finely dice a white onion. Add the onion to the pork fat before it gets crunchy and fry both for awhile together. If you like more of a burnt onion taste than keep cooking, if you want them sweet, cook the onions accordingly.
    -Cube and boil potatoes like you’re making mashed potatoes. Run under cold water to cool
    -boil the cod for a few mins until it will flake apart.
    -Mash potatoes, add cooked cod, add the scrunchens and onions, but try and leave the grease in the pan for frying later. Mix it up and add salt and pepper to taste.
    -Add flour until it’s sticky.
    -make into patties and dust both sides with flour and fry on medium-high heat until golden on both sides. Add oil to the pan as needed.

    This is the pork fat they use. They dice it fine and cook it until it’s crunchy bits and call it scrunchens.
