So far my favorite knife is a Grohman #1 belt knife. A strange looking design compared to most hunting knives but the ergonomics are perfect for me so using it for skinning, deboning, etc is very slick and comfortable. If I had to have one hunting knife only, that would be it.
I also have a Benchmade Altitude that I really like and will continue to use on backpack mountain hunts.

A number of years ago my wife got me a Camilus Fuerza Les Stroud knife. I would say if I had to pick one knife to do everything (including batoning in a survival situation) this knife would be my choice (or something of this style). It's also the best knife I've ever used to flesh a bear hide right down to the skin with one swipe without having to worry about making holes (makes skinning almost seem like breeze). Highly recommend it

Lots of people seem to like the grohman knives. I have an outdoor edge swingblaze I like. AO has a big knife thread going on right now.

My best go to is a Heinz Leber that I purchased in the late 1970's from Heinz in Hudson Hope. It holds an edge incredibly. and not to hard to sharpen in the field if needed.
I’ve never been big on spending a lot on knives, I use two knives, a Victorinox serrated blade knife for general purpose and they are cheap, sharp and disposable, the other knife is a replaceable blade outdoor edge knife, these two have served me well for years.
In 2020 salmonbelly fixed me up with a North Arm custom folding knife “Skaha II” and wow what a hunting knife, lightweight, compact and holds an edge, I highly recommend this knife, as well they are a BC company.

I second the Victorinox but I keep that one at camp. On my person I carry a North Arms Lynx. Great sturdy and strong knife. Used to carry the Mallard as a lighter option but found it alittle flimsy.
For an EDC I carried a Ken Onion edition Spyderco but I recently lost it so I'm looking at the Para 2.

Hands down the nicest albeit most expensive is my benchmade bushmaster (bush something maybe bushcrafter).
It's a bit heavier but I can swing it like an axe if need be by holding onto the flared end with my index finger. Very well designed knife and I've never had to sharpen it yet. 2 deer, one black bear. Amazingly well made.
I don't like folding knives for hunting as meat and gunk gets stuck in there.
I use a 1945 USMC Ka-bar and a folding deer antler handle oldtimer both from my grandpa . The old timers blade is starting to get small but it still breaks down a moose pretty quick
