I usually corn the tougher cuts like the neck. Keep the muscle whole and slice thin against the grain when done. Goes great with any charcuterie and a Gold Hill Pinot or Dhalwinnie.

You know, I have never been big on canning meat. But canned bear meat is incredible. Open a jar, the smell alone is delicious, dump it in a pot, heat up, use in tacos or stew, super easy ready-at-hand weekend meal. Tender, safe, delicious! Easy to make as well... My next bear I will can a lot more of it, started as an experiment this year and I am addicted!
Whats your plan? marinade ? brine? slowcooker?

A corned brisket or neck meat is great. I just can't eat it any more. I have to cook out all the grease and flavor out for my tummy.
