Either butter, salt, pepper wrapped in tinfoil....or the way my kids like it best - ram a stick from its butt out its mouth, guts still in, and cook it over the fire till the skins starts to peel, then just pull the skin off and pick the meat from the bones. Sounds kind of savage, but nothing beats it!
^^^my son would love that....I usually cook em in aluminum foil w/ lemon juice, salt & pepper, butter, garlic powder, sometimes a little soy sauce & sometimes garlic if I have some kickin around..
True bush fair, whole on a stick. I gut mine stick through the mouth jabbed in to the tail a bit. Never aluminum foil. Amazing how meny people city and bush wise have never done it. They're usely sceptical, no salt, pepper, butter. There always amazed at how good it is. Sitting on blocks of just cut firewood and plates cut from the same log. Eating with fingers and whittled sticks for forks by some no name lake. I hear the stories for years after.
Second way is a whole lb of butter in a cast iron pan ,deep fried over a hot fire. I carry heavy palm insulated wielding mitts just for camp cooking.
