    Thanks for all the replies. The hike in was about half a day. Hike out was a bit longer.

    Thanks you. In my experience there is a world of difference in taste between a mature buck harvested in September versus November. Deer taken in September are delicious and mild tasting. Any buck I shoot in November I typically make some sort of smoked sausage out of it. Younger bucks tend to be a bit more forgiving in taste no matter what month they are harvested.
