    Heart, Liver Caul fat

    I kept these three off the fat muley I just tagged, thinking of trying the meat eater recipe with the three of them. Diced heart and liver, wrapped in Caul fat and baked. Who has tried it? what your favourite organ recipe?

    I like both heart and liver, but I prefer eating them separately as they taste quite different.
    I tried caul fat wrapped around a shoulder roast. I'd recommend people try it as it was quite good. Apparently caul fat is good for sausage making. Will try that soon.

    I've done it with other critters and have enjoyed it. Deer... not so much.

    Reminds me of a SFU friend, BH(not 308 lover) from the 60's, an avid hunter, who loved the internal deer organs cooked. While field dressing a deer he would always take a bite of the liver to celebrate his kill.
