I made pepperoni myself using the mix from stuffers in langley, turned out great! I added about 30% pork. I think you'll have to find a backyard guy because of the wild animal rules for commercial butchers. I don't know of anyone myself, but give stuffers or hopcotts a call and ask them if they know anyone.
