    Smoking freezer burned salmon

    With all this shut down,my wife decided we should be digging out the freezer so I found a nice salmon fillet somebody gave me that showed evidence of freezer burn,which generally resulted in crab bait..But I remembered hearing someone saying smoking it made it edible so I brined it over night and smoked it ...not bad at all..not as good as fresh smoked but no freezer burn taste.Certainly better than throwing it out..

    Yah I trim off the worst of the burn and cook or smoke the rest. It won't kill you eat freezer burnt anything.
    Mold on cheese, mold on bread. No one has died from either.
    You can smoke the cheese with cold smoke.
    The challenge of retirement is how to spend time without spending money.

    Annoys me no end to lose a nice piece of salmon to freezer burn...tastes horrible,but brining and hot smoking made it edible...not great, but edible...

    good to know. I tried canning a bunch of old salmon that I trimmed the freezer burn off of. I'm telling you, that did not turn out well. The dogs sure loved it tho
