Hello all. I'm looking at having some of my BC mountain goat made into sausages/pepperettes. Given that Ontario butchers never see mountain goat, I'm wondering if BC folk mix pork, etc. into the goat for sausages, pepperettes? Any additional tips appreciated.
I have yet to harvest or try goat, but I would definitely recommend mixing pork in with any sausage recipe...I'm assuming that goat meat, like other wild game, is a drier meat therefore pork into your recipe definitely a good idea...
