I just cut the legs off and break the foot off at the joint. The legs are my favorite. Darker and greasy, like the KFC of the woods.
I cook them whole and just pick at it with my teeth. Makes me feel like a caveman
Bit of an art though. I wouldn't give one to a guest as there's so many small bones and tendons

Should've had my second Bear of the season, and my target of 2 a year. Guy I was with is not much into Bear and didn't want any part of it. Then the next 2 days we had planned together he couldn't make it, won't be passing up again that's for sure. They can watch and wait and we won't split it i'm fine with that.
