    Deer jerky recipe

    Hey all here is a great deer jerky recipe. I’ve tried many and almost all were failures. This one is great.
    3 lbs deer cut to 1/4 inch
    soak in cold salted water for one hour then rinse (coarse salt)
    2 tbs of cure
    4 tbs brown sugar
    5 tbs Worcester
    4 tbs soy sauce
    1 tbs garlic powder
    1 Tbs black pepper
    1/2 bottle of vh teriyaki marinade
    cure 24 hours remove from brine do not rinse
    heat in smoker at 160f for 1.5 hours
    reduce to 140f until done to your preferred dryness

    I use apple wood and only smoke for 1/2 hour

    I use the one from the recipe book for game called "Buck, Buck, Moose" for the moose we shot last month. My favorite is the chipotle pepper marinade but I use maple syrup instead of white sugar. I'm on my third batch in a week.

    I'd include the recipe but I don't want to rip off Hank Shaw, the author. He is a hunter/fisher/forager trying to make a living off his book/blogs/website. Highly recommend if anybody is looking for a Christmas gift idea.
