    good stuff!!!Salty.

    Usually once I first detect that "white fat puddling" beginning to happen on a filleted salmon, its basically ready to take off the grill.
    Best way I do it is make a "cookie sheet" out of aluminum foil.
    Fillet salmon, pull out the side pin bones with pliers.
    Marinate in a "secret sauce" (I may share if asked nicely).

    Once grill is up to temps. place salmon, skin side down, on tin foil tray.
    (add my sauce over the top)
    Cook.
    Then use the spatula between the meat and skin!!!
    Works awesome!
    Skin stays adhered to tin foil tray (its burnt to it) and you are left with just the meat.

    Add to what Salty has said lots of people have their favourites and favourites at certain times of the year. Someone mentioned earlier that an ocean caught coho is the best eating....for me it's in 3rd place behind sockeye and chinook.

    Aside from sockeye being darn good, an April chinook that we catch around Gabriola Island is amongst the best fresh eating salmon period. They can come in almost pure white, pink, marbled to almost a crimson colour. I almost never freeze ones around that time as it's just too good fresh.

    Caught a chum out in the chuck last September and cooked some of it up fresh that day; it wasn't too bad and was still very chrome. I found it needed a bit more of a sauce to it but still not bad.

    And yes......DO NOT overcook it. You may as well just buy a can of salmon from your local market.

    Coho are not good swimmers.
    In fact they are second from the bottom after pinks.
    The strongest swimmers are Chinook and sockeye.
    They hold in fastest water and swim the longest distances to their spawning grounds.
    In BC we have Chinook swimming 1300km to Robson River spawning grounds.
    In Idaho sockeye swim about 1400 km to Salmon river to spawn.
    Salmon are amazing m'er f'ers and so much of the environment depends on them doing their thang

    In all honesty... not a salmon fan.. like white meat (cod, ling, halibut, bass) but may just take you up on the offer someday

    you can let'em go! Very few fish in this world are more fun then a 25lb Chinook........ in fact I can think of only one........ a 15lb Steelhead...... full disclosure I have never caught a Sturgeon so,,, there might be that.

    Okay, here, try salmon this way:
    Fillet salmon if you have it whole.

    Marinade is this: Remember, measurement are only a way to give proportional guidelines, I use way more of all to make enough marinade

    3 Table spoons Olive Oil (or Avocado Oil)
    3 Table spoons Soya Sauce (or I use Maggi brand)
    4 Table spoons Ketchup
    2 Table spoons Honey (but we now use Maple Syrup!, doesn't dry up like honey can when stored and is surprisingly good in this recipe)
    1/2 to 1 Table spoon Dijon Mustard (the good stuff!)
    1/2 Lemon squeezed.
    1 Clove Garlic (or 2) pressed
    Celery Salt
    Pepper
    Rosemary (fresh sprigs)

    Let the salmon sit in there a few hours.
    Make a cookie sheet style "tin foil tray" (doubled up on the aluminum foil)
    Cook at 500 on BBQ, skin side down, and remaining sauce poured over top.

    Wait for fat to come to top or check between the meat flakes.

    Give it a try, don't think you will be disappointed.
    Add parsley on top if you wish.

    Holding in fast water is not an indicator of swimming ability. Most times in fast water the hydraulic forces are less on fish.
