    bear european weineirs.

    anybody ever make this kids always like hotdogs on the weekends and we know have a 6 bear limit in our household...(boy passed his core.)

    anybody ever try to make this.

    Congrates to your son WWD.I was proud of my boys when they both passed there CORE's yrs ago,I'll let you in on a good spot or two i used to take them to for the youth hunts,mind you im sure you already have that figured out.Wieners i havent done but tons of bear sausage we've made,some yrs we grind the whole animal

    Made them with moose and or deer and they are fantastic.

    do you make them yourselves? how do you emulsify the meat? or do you just hand off the meat to your butcher?

    Just took bags of processed meat that I cut and cleaned to Illecmans (sp) deli in Kelowna.

    Probably wont be a too big of a rush now. In the fall I process all the meat myself and place 10lb into ziplock bags for sausage etc and throw into the freezer. I usually take it to them after Christmas when the fall rush is over.

    Made them with pork. I place ground meat in small batches in my food processor and keep the temp down and they turn out well.

    Curious how bear would lend itself to European wieners (which I love!)..I know I've done some bear hams and they taste nothing like bear hams, more like corned beef..I guess if you made wieners with 60% pork and 40% bear it might taste similar..
