    had a great fishing opener this weekend. not a ton of time but managed a great day out in the woods and came home with two nice rainbow trout.


    the smaller one i put in a brine - salt, brown sugar, some lemon. then smoked in the Bradley. this was my first time hot smoking a fish, and it turned out great. took about 2.5-3 hours at 170.



    I served that on a board with crackers, cream cheese, bear summer sausage, and smoked jalepeno poppers.


    for the bigger fish i filleted it and made strips for tacos. in the front with fresh rhubarb from the garden: rhubarb and ginger chutney, sweet pickled red onion, standard onion and cilantro. nice and tangy with the fish.
    and the back is a more done up version of my asian fusion fish taco: spicy asian 'slaw with sesame, cilantro, jalepeno, cheese, hot sauce, mayo, and egg noodle for crunch.

    follow up holiday brunch for me and the mrs. smoked trout eggs bene. and yes, with homemade hollandaise sauce.

    To celebrate our 39th Anniversary yesterday...

    Whitetail, Pork, Beef, Lamb Fondue with all the trimmings:



    Always have liked a good fondue, and this one certainly was!

    Thanks! And yep, that was a rather fine way to celebrate!!

    A very good Buddy just got back from overwintering in Panama.
    He stopped by to catch up and presented me with a couple Yellowfin Tuna Steaks from a Tuna he had caught and processed himself:



    So I prepped the rest of the meal, then quickly swished the steaks through blistering hot Sesame Oil for mere seconds:



    Complimented with a bucket of clams, cheesy garlic toast and a fresh garden salad.



    The whole meal was great but that Tuna was absolutely outstanding!!
