    Mule deer osso bucco.. The shanks have become my favorite part of the animal now.

    SR80, mind sharing your recipe for Osso Bucco?

    Did one up last year and was not the best... looking at utilizing the shanks for more than just ground.

    Roast and perl a red pepper or use one out of a jar. Chop it up finely with cilantro, parsley, garlic, green onion, lemon juice, olive oil, chopped chilies or chilli paste like sasmbal olek and salt and pepper.

    Preheat oven to 200 F. Put your steaks in there for about 20 minutes. Then remove and put directly into a piping hot cast iron pan. Quickly sear both sides, remove from pan and let rest in a warm place for 7-10 minutes. Slice and serve.

    Oven + pan sear is truly the best method for a good steak. Little bit more complicated than defaulting to the BBQ but it is definitely the best method.

    Nice I like that..been hearing lately of people hitting it with a torch after the sous vide..
