Cool Re: Wild game Dinners 2018/2019

    Sometimes simply is good.
BarBee smoked a couple pork loin steaks last night, then combined them with Mexican Dirty Rice with Beans (fortified with a little extra chili powder & chilis) with fresh uber sweet corn on the cob:

Bonus is the leftover rice will form the basis of the air fried stuffed peppers I make tonight.

    Cheer,

Added some chopped Spanish (red) onions, diced smoked pork, a handful of sweet cheery tomatoes to the rice then stuffed a couple peppers. Tossed them in the air fryer, and walla, the base for yesterday's dinner:

Turned out very well. The sweetness of the peppers & tomatoes actually complimented the spicy rice beyond expectations!

    Cheers,

Made too many prawns & clams last night, so a nice seafood chowder is the order for today...

No less than five different seafoods went into this chowder: prawns, shrimp, halibut, crab and scallops.
Nice creamy base and the taste was outstanding!!
Great way to use up the leftovers...

cooking up a storm there as usually 'Nog. looks great. good score on those fiddleheads, i haven't had them in years, but always loved them. did you pickle any? i reckon that would be tasty. Used to be able to find "green giant" brand frozen packs at the stores.

ok not so much wild game for my meal, more cooking in the wild: campfire steak dinner at turkey camp. ribeye, vege packs, and sweet potatoes. best steak i've had in a long time. i love cooking over fire. also had cheddar bear smokies on the trip, which were part of my first foray into sausage making. they definitely held up well.

Yeah, we did pickle one jar. Found a good recipe to keep them crunchy.
Guess we'll find out how they turn out in a few days now...

    Great looking picture btw!!
