Lynx Quesadillas for dinner tonight (cheddar, serrano peppers and a homemade salsa) They were really good! Texture of the meat is a bit tougher than chicken, but otherwise you'd have a hard time telling the difference.

Thumbs up Re: Wild game Dinners

Finally getting around to checking out that massive steer I cut up for the Ladz.
Yep, that is our full sized meat platter:

    A quick sear...

Turned out a perfect hedging on the side of rare from medium rare.
Forgot pix after that one, but suffice it to say it was downright delicious!

    Cheers,

My hunting buddy and I harvested this 6 x 5 whitetail a couple years ago and it still amazes me how good it tastes for a mature buck: this is a whitetail slow cooker roast with pork schnitzel and a salad:

    Cool Re: Wild game Dinners

Home made Spaghetti sauce with Chanterells and our own sun-dried tomatoes & home grown garlic.
    Whitetail meatballs.
    Shredded marble cheese.
    Cheesy garlic toast.

And of course a fine Merlot to accompany.

    Cheers
