    I love them with Panko. Mix your favorite spices in with the panko. Flour the cutlets and dip in egg and then lay each side down in the panko and spice mix and fryem up. ��������

    I just made some last night from an antlerless w/t harvested by my kid on Saturday.

    Beat down the cutlet with a tenderizing mallet to about 1/2" thickness.
    Whisk a single egg in a cup or so of Buttermilk
    Prepare a plate with a cup or so of flour.
    Pour a package of dry Onion soup mix onto the flour.
    Prepare a hot fry pan with olive oil - others claim bacon fat makes it even tastier.
    You know the rest: Dunk the cutlet in the buttermilk, press the wet cutlet into the onion soup/flour mix both sides then lay them in the hot oil.
    Just brown both sides (flipping once). After the flip, just as the juices start to come out, take it out of the oil and onto a paper towelled plate.
    Salt and pepper to taste after the frying is done.
    Tender, quick and tasty.

    It's an easy favorite for me and the kid.

    Pound them out a bit, spread a thin layer of cooked stovetop stuffing on them and roll up, use toothpicks to hold them together.. egg and roll in panco and brown in frying pan then finish in the oven for a short while.. I also use this method on wild turkey breasts that are butterflied and pounded out.
