    Whole smoked elk tenderloin

    10am yesterday, dad( gunpowder ) and I broke the kids elk down into 4 quarters, ribs, 1 bag of neck meat and another bag of back straps and tenderloin. I was going to cut and vacuum seal the back straps and tenderloin but decided not to. While delivering the kids elk to the butcher yesterday I requested that he clean up the tenderloins first........decided to do a whole smoked tenderloin for supper.


    All I used was a little bit of garlic powder and Montreal steak spice and I'm using big game wood pellets( green mount grill or treager, can't remember ). Set the smoker for 185 and cooked it for 45min. Turned it up to 325 until the thermometer said 160( just over 1hr ).
    For my first try it was amazing!! Wife and kids loved it.

    Sounds great. Meat and a smoker with anything on it, tastes excellent.
