My favorite is a Gene Ingram B&T, but I use a havalon a bunch. And a couple other customs as well. And a couple K. O. A. Jobbies that are pretty good as well.

Cold steel master hunter plus. That san mai 3 blade (japanese) really stays sharp through out the hole process. Only downside is, as with all knives, is that the fat sticks to it when its cold and "dulls" it. I just bought an outdoor edge replaceable knife to try out this coming season. See how that goes...
My favorite is probably the Grohmann I have on my belt
But I always have a Havalon with too they're awful handy.
And another but, I bought this Outdoor Edge kit drastically reduced couldn't say no
I think I paid 60 bucks I've got that much benefit and more just out of the little boning knife for final processing holds an edge well.

Second the Grohmann, and a cutco drop point.
I like my Wyoming knife in combination with my spiderco rescue assist. These in combination with a hatchet work great.
When in doubt, just pin it.
