    Yep, that I did.
    Back then however I was suspending the strips between the grill wires on toothpicks.
    WAY to much like effort, and damn finicky!

    Decided this time to try it without that extra effort.
    And it WORKED!!

    I believe the heavy shot of BarBee Pam, and flipping the strips a few times while drying really helped.
    Two runs down, and NO sticking to the grills at all (quickly touching wood...).

    Round three is on it's second day of drying just now.
    Coming nicely, and the air temperatures continue to cooperate.
    That will be a wrap for this winter's efforts - finally out of salmon beyond a few vac-sealed steaks.

    Roughly how much salmon did you throw in for this recipe? Looks delicious something I’ll definitely have to try.

    Somewhere around 40 pounds or so.
    You can obviously adjust for weight / volume.
    What you want is sufficient brine to drown (they won't sink until damn near done) the strips by at least 3 or 4 inches of brine.
    Stir (gently) from time to time to bring up anything that settles to the bottom.

    I pretty much always do this run in the fall or winter, so temperatures aren't much of a concern.
    I'd guess it would be safe to dry them up to about 60 F or so.
    When it is warmer, the drying time will be substantially reduced.

    Thanks for posting Nog, I’ve watched your posts about the candied salmon too many times and I’m finally trying it. I’ve got a batch of trout 24 hours deep in the brine. Can’t wait for it to finish up!
