    Thumbs up New Candy Salmon Recipe

    Always experimenting it seems.
    So, even though I have several tried & true methods for candy, I decided to experiment yet again.

    Brine:
    8 - 10 liters White Cranberry Juice
    1.5 cups coarse salt
    3 bags Demerra Sugar
    1 full bottle Roasted Garlic & Red Pepper Spice
    1 Liter Thai Sweet Chili Sauce
    1/4 cup soy sauce.

    Simple. Brined to 48 hours, dried for 8, then slow smoked for 12 hours (low heat).

    Results:
    Marvelous candy flavour with a distinctly tangy after-taste.
    A new WINNER!

    nice combo of spices and flavor in the brine. what smoke flavor to finish em off Nog?

    I use a mix for fish. Bottom layer in the pan (large cast iron frying pan) is either alder or apple, then a top layer of a Competition Blend I get in from the states. Not certain what the latter blend is, but produces a nice soft or velvety finish.

    LOL! You simply have to think outside of the box (or recipe as the case may be) sometimes.
    I'd been thinking of how to impart the "Tang" into a sweet candy style product for some time.
    After some debate, this experiment is what I came up with.
    Have a little experience doing this sort of thing.
    Obviously don't post much about the dismal failures...

    lol ya that's a wild mix! I am going to go Rogue this year too.... too old and stale is the Salt and Demerara std norm!

    They look perfect from the pics. Superb sealing job too, should last in the freezer a long time...or not
