    Sauasage from pre-ground meat?

    Ground most of my WT in the fall but have been thinking about trying some sausage making. Any issues with making sausage from pre-ground meat?

    Just mix it with your spices and ground fat and stuff the meat in casings.

    Cool thanks. Just wanted to make sure there were no issues with it not being freshly ground.

    I alway wondered the same thing, both because of the whole refreezing thing if doing fresh vs smoked sausage and not sure if it better to do a course vs fine grind for sausage.

    I know a few people including myself who bring frozen trim and ground meat into the sausage maker after the hunting season rush is over. No issues here.

    I just started this year making sausage, all my meat was pre ground and frozen. I just thawed and mixed in with my fat and spices and it all turned out really well.

    If you added beef or pork fat when you ground the burger just adjust the amount you add for the sausage from that. If you did a fine grind burger your stuck using it instead of a coarse grind which is preferred in some sausage types, other wise its all good.

    excellent - thanks for the replies! I figured it was alright, but just wasn't sure if there was anything I was missing...now to find some good casings.
