Just mix it with your spices and ground fat and stuff the meat in casings.

Cool thanks. Just wanted to make sure there were no issues with it not being freshly ground.
I know a few people including myself who bring frozen trim and ground meat into the sausage maker after the hunting season rush is over. No issues here.
done it several times. Never had any complaints.
I just started this year making sausage, all my meat was pre ground and frozen. I just thawed and mixed in with my fat and spices and it all turned out really well.
Their steaks, roasts and burger to me! Tom
