    cooking organs

    I derailed the hair on the meat thread with talk of liver pate so I will start a new thread for us to share recipes for cooking innerds

    So singe info the hair off makes it taste gross, but boiling makes it taste great????

    Hmm never thought of saving the kidneys. Might have to try them. Was at a Vietnamese restaurant once having some of that Pho soup for the hangover. One of the choices for meat was pancreas. Whats the deal with that? Anyone tried that?

    Pancreas or thymus gland= sweetbreads. Simmer them in salted/vinegar water until fairly cooked, then peel off any membranes and nasty bits. Slice up and pan fry, or dredge in flour and deep fry.
