    I sprinkle a little bit of old bay. Par cook 1 lb bacon on cookie sheet. Wrap filet with bacon and finish cooking until bacon is crisp. Any leftovers get chopped and made into saamiches. And speaking of that im out of halibut

    When i can salmon i usually put 1/2 and 1/2 salmon/halibut in each jar, ends up pretty nice. I also smoke it. If you only have a piece or two the the pan fried is best but if you have a large amount the jarring and or smoking is a good way to preserve it

    I like poaching halibut in a deep frying pan with a lid using a lemon dill sauce reduced by a white wine served with or on top of rice.

    Butterfly some of your thicker pieces into portion size chunks, mix cream cheese, real parmesan, shelled dungeoness if you have it, and salt and pepper to taste. Steam some spinach and stuff spinach and crab mixture inside of butterflied halibut. I like to bake in an aluminum pan with a can off cream of mushroom spread over the bottom and butter a bit of mayo on top of fish and sprinkle panko on top. Bake at 380 until done, don't overcook.

    I like to do halibut this way. Lemon zest sprinkled in top, some shredded ginger and garlic on top of that and sliced oranges on top of that. Put gobs of butter on top of that, wrap in tinfoil ( I usually have lots of tin foil for making my hats) parchment paper will do as well. Bake and mange. Good with any type o fish.

    Here's mine,
    rice paper rounds dipped in water to soften
    put halibut piece about three by three in centre
    sprinkle a little salt a little pepper and a bit of fresh tarragon
    wrap and repeat until you have enough for dinner
    pan fry and serve with dipping sauce
    1/4 c soy sauce
    3 tbsp rice wine vinegar
    2 lg shallots finely minced
    2 tbsp chives finely minced
    1 garlic clove
    1 tsp sugar
    1 tsp tabasco
    make the dipping sauce up a couple of hours ahead to let the flavours marry and serve with stir fried veg and rice
    This is my wife favourite meal and is amazing, I will be making it for her Bday next weekend.

    Marinate in greek salad dressing then cook in pan
    serve over rice. With fresh veggies mmmm so good
