Pepparoni recipe needed

I have started making a lot of my own sausage this year. I make a pretty mean garlic sausage and pretty good salami. However I have yet to come across a good pepparoni recipe. Does anyone have one that they would like to share.

I buy my spices premixed from Stuffers. They have always had real nice fresh spice's and they come in 10 or 25 lbs premix's. I buy the mild and add extra hot spice to suit ones taste. Good Luck.
