Did you pick out all the bones before brining or were these cuts from the tail section only?
Just a big pain trying to get all the bones out and nothing worse than bones in my smoked salmon. This batch looks awsome!!!
I cut the slices lengthwise from the fillets and worked carefully around the bones when I got to them. I found it worked pretty well that way. May have wasted a wee bit more than pulling the bones out individually, but not much.
