3 TO 4 LBS LEAN BEEF (CUT IN STRIPS)
1/2 CUP TOMATO BASE OR CATSUP
1/4 CUP SOY SAUCE
1/4 CUP WORCESTER SAUCE
1 TBS ONION POWDER
1 TSP GARLIC POWDER
1/2 TSP CRACKED PEPPER
1/2 TSP HICKORY SMOKE FLAVORING
blend all ingredients and soak meat strips 6-12 hours in refriderator. stirring and turning meat occasionally. once meat marinated to desired strength drain off marinade and dry.

I like to spice it up w/ a t-spoon of dried chilli's.
How would one go about doing this in the oven?
I have done it in an oven...........usually around 150 maybe a little lower depending on the thickness of the strips. l also use four racks with the bottom one covered with tin foil to keep the drippings from making a mess, and it gives a more even heat. Takes 3-4 hours, again depending on the thickness of meat.........don't over cook, tastes way better a little moist rather then on the dry side.
Use the recipe in the recipe book from the Luhr-Jensen Big Chief or Little Chief Smoker. If you don't have it go to your local sports shop and ask them if you can have a look at the recipe book.
