Very nice. I head to an alpine lake that produces nice little brookies & the occasional rainbow. Usually pan fry whole, head on. Will have to try your fillet candied method, maybe with some maple syrup in place of or in conjunction with the brown sugar.

Nice vid. Similar brine as I use but try adding some garlic salt. Sprinkle with coarse salt and garlic salt first, then add the Demerra brown sugar. This was always to smoke salmon but I'm curious to try shore-side one afternoon as you have shown. Good work with the family/friends!
