Tried a new-to-us version on Brussels Sprouts last night.
Simple actually - smother with olive oil, toss on a baking pan, add a bunch of thin sliced garlic over them, then cover with fresh grated Parmesan.

Burn at 400 for 20 minutes, add a little more Parmesan and heat just long enough to melt that:

Actually caramelizes the sprouts & garlic.

Decided to try out that Greek Lamb recipe on a shoulder from this fall's archery whitetail buck:

At least as good as the lamb was! That recipe is a WINNER!

Nice work! That looks amazing.
We took the leftovers from that whitetail shoulder and made a stir-fry with it last night.
Used the accompanying sauce for the stir fry as well.

I will post the recipee on this site under BLACK BOTTOM PIE..ITS GOTa few ingrediants..but follow it along..step by step.
Biggest secret is keeping ones pie hole off the pie untill its chilled thoroughly..like make friday..enjoy on saturday cold.
I too have 2 shoulders from my mulie and will do greek mule deer shoulder instead of lamb .
