X2 on soaking overnight. I only like the liver from a doe, I'v seen too many rutting buck livers that have processed most of their body fat and didn't look to appetizing. Sliced thin, 1/4" and fast fry.

Both livers I cooked had too much bile left in, and I vomited both times.
Don't cook it with the gall bladder attached.

My Dad was a meat inspector at a small slaughter house.... you can't believe some of the strange things in an animal. Liver flukes have to be one of the grossest He still has a jar of them in formaldehyde

Hell papa jim dont even go hunting next year we will save you all the livers, from the game and the steers..killing a steer a month right know i can save you some liver..
Re: Deer Liver preparation/recipe
Rare liver? Nope. I enjoy a good blue rare steak, but liver isn't part of the muscle group, it's an organ. I'll have mine cooked please, cooked thoroughly most likely will kill the flukes hopefully. LOL
Re: Deer Liver preparation/recipe
with your finger, peel the outer skin off the liver
it's very thin, and without it it melts in your mouth
3/4 " thick, quick sear..........kaboom
game changer
Re: Deer Liver preparation/recipe
I keep the liver for my wife and friends who all rave about how it's the best liver in the world. I like the smell of it cooking and the look of it but something about the texture makes me gag.
Re: Deer Liver preparation/recipe
If the texture is grainy then it's over cooked. Which is the way many people eat liver.
