They make custom boat tops and work with zippers and large pieces of cloth.

But really any tailor might be able to replace a zipper.
I thought I had to replace the zipper on my Tipi tent.
Took it to a repair place in Victoria. Was told that a lot of times when you think it is the zipper it is just the slider.
Sure enough, new slider for $20.00 installed and I was good to go.
