^^^looks awesome Gate...lol wish I had pics from me and my friends meals the other night: we had WT and MD buck meat from my bucks this year, cougar from his cat last year, moose and elk from his harvests the last couple seasons as well..and grouse from this year we made a cream cheese and jalapeno sandwhich between each breast mmmm..
I'll never forget the meal below though: it was 2010 and my second year hunting, the pic below is of my first whitetail: we had WT steaks that night on the campfire as the little buck was hanging, no deer has tasted better for me to this day..

Over the last couple of days, Bear Barley Soup - make an extra large Sunday roast, the leftovers go in the soup pot. One of my favorites, no matter what wild game.

Roast and perl a red pepper or use one out of a jar. Chop it up finely with cilantro, parsley, garlic, green onion, lemon juice, olive oil, chopped chilies or chilli paste like sasmbal olek and salt and pepper.
Preheat oven to 200 F. Put your steaks in there for about 20 minutes. Then remove and put directly into a piping hot cast iron pan. Quickly sear both sides, remove from pan and let rest in a warm place for 7-10 minutes. Slice and serve.

Oven + pan sear is truly the best method for a good steak. Little bit more complicated than defaulting to the BBQ but it is definitely the best method.
I call it the "quick sous vide" method :)

i am amazed/dumbfounded/stupified that I reached the age of 58 and only just learned (and made/ate) venison shanks (aka osso buco)
usually these sinewy bony morsels were thrown in the ground pile

Checking a few of the photos already posted, I'm likely not worthy, but what the hey.... 2 pals & I were fortunate to harvest a moose this year on a shared LEH. Daughter & son in law have done up a roast I gave them, but no photos. I've been working mostly with ground moose meat, saving the better cuts for special occasions.... which have not happened quite yet.

Not dinner, rather lunch, but wild game is the theme. Reminiscent of my time spent in Germany, the moose liver was put to good use by my daughter making liverwurst. Et voila, a truly international lunch enjoyed today. Local Black Forest rye bread, lightly toasted, spread withPfälzer Leberwurst, a good helping of Dijon moutarde accompanied by Florida OJ.
