View Full Version : Making Deer Jerky

It has been a while since I made a batch of jerky. I am very picky and cut every piece of fat and other crap off leaving only the good stuff. Wednesday night, I took 2 roasts and 6 packs of steaks out to thaw. Last night, I trimmed up and cut the meat into strips - this took four hours but it is worth it in my opinion. It is also the reason why I only do this two times a year.

The finished raw product. Just need the brine now. This is what is left of 2 roast and 6 packs of steaks.

My special concoction - forgot to have the beer in there too. 1/2 can of a nice pale ale adds a nice flavour.

24 hours in this and then into the smoker.

This goes on today once I get back from quading/ice fishing this afternoon.

Looks tasty doubled. I really enjoy my smoker too for making jerky and smoking fish.
Let us know how it turns out.

I did a batch this year from an Alberta whitetail. I used the prepackaged mix and dried it in the oven. I did about 15 lbs of meat, turned out really good.

twice a year!

definately can tell you dont have kids derek! that would last 4 days (maybe) at my house....:eek:

If you can get your hands on a meat slicer,some storebought ones will do.I have a commercial grade one in our butcher shop an oldtimer gave us.Take the roast,slab of meat and freeze it overnight,or pull it from the freezer,and cut it frozen,.. works like a hot damn.You can set your slicer to 1/4 inch and perfect everytime. I have tried dozens of recipes and keep coming back to the "little chief" smoker recipes.1/2 sugar,1/2 salt brine and water mixture overnight in a bucket,rinse,pat dry & smoke ...good eats. X2 "leaseman" mine barely makes it through the day with my little gremlins!!

mmmmm..... looks good! i made some moose jerky just today but its in the smoker and the pieces are anything but uniform. its my first time so i hope it turns out good... it wasnt one of thosejerky cure things it was a straight up homemade recipe.

Looks great!! I just made some for the first time! Turned out great, I think I'll make it a habit!!! The pictures are makin me hungry!

Just picked up a Bradley from CT, got the fixin' and going to do a batch on the weekend. Looks good Derek.

You can get jerky racks for the Bradley. They have a finer mesh than the regular racks. Come in handy if you make jerky out of ground meat.

That jerky sure looks tasty. It's almost time to start up the smoker again.

I made 20 lbs of deer jerky 2 weeks ago and it been gone for 4 days already.
doesnt last long its just so damn good!!

I make it all thre ways, ground, chunked, and shaved. they all come out a different way, I like the chunked and shaved for backpacking and hunting, tends to be a bit more chewy, where as the ground method tends to devoured watching Football(i do mean dveoured usually doesn't make it till half) when the game side of the freezer empty I make jerky from ground beef as it is cheap and comes out quick and tasty
One thing I have done though I too am a Big Chief owner/user and once the winds pick up and the temps drop they can be a lil bit inconsistent. So I made a hat for mine out hot water heater insulated wrap, this cuts the smoke time down and keeps even and consistent heat across the entire smoker. costs about 5 buck for the stuff in bulk at any Slegg, HomeH, HomeD etc. next time I have the smoker and hat out I'll take some pics
