I want to do up a caribou roast in the slow cooker. When I have done roasts in the clow cooker before I have just thrown it in with some spices and broth which usually turns out pretty good, but I was wondering if anyone had any ideas as to how i could jazz it up a bit more?

I like to throw Italian dressing in the bottom of the crock pot, add's nice flavour.
Possibly slice some garlic and insert into roast.

I roll mine in Knorr Vegetable or Onion dry soup mix and leave it at that...delicious.

Wrap the roast in some properly smoked bacon. Adds flavour, as well as some moiture (fat) to what I'm assuming is a pretty lean piece of meat. Also, throw in some beer (preferably dark) which adds an interesting dimension.

Caribou loves cranberry and blueberry. Salt, pepper your roast, and sear in a hot cast iron or other heavy pan. Put in the slow cooker with a handful each of cranberries and blueberries, frozen are fine. Add a little onion, preferably fine chopped. Add some liquid, cranberry juice ( not sweet stuff) or lighter red wine. Cover and let the cooker do it's thing. Remove the roast, let stand covered. You can reduce the sauce by boiling in separate pot for a few minutes. Serve over the slices of 'bou

pretty satisfying harvesting the moose, taking great care of how it was cooled and the whole processing of the animal...then choosing the different ways to make a roast of our choosing..size..what combination of cuts..and finally how to cook that particular roast...it literally fell apart under gentle pressure from a fork..and tasted exellent...

cheers
