Ate that last night! Elk steaks about to be cooked with prawns and rice here, woman will probably make some kind of vegy but nobody cares about that anyway!

Not sure of cut,but put deer roast on bbq with the rotisserie,let cook for an hour @ med-low heat covered,than uncovered and added spices and cooked another 30 minutes,with noodles and veggies.

Best meal in a long time....

I had seal a couple weeks ago. It was smoked, kindy fishy, very rich. You could definitely live off the stuff.

Apparently the pie and ribs are much better tasting. Least that's what the newfies tell me - they're a bit of a different breed.

This even's meal will start with Spotted Owl Breasts gently grilled over a Hickory fire! I chose a 1787 bottle of Chateau Lafite to help with conversation over the meal also! This is followed by Mnt Caribou Steaks,not to be confused with the Barren Land Caribou, the Eskimo people eat them, not us! The Fresh steak is char broiled over a Birch fire, med rare of course and served with a ice chilled fresh garden salad, all ingredients are flown in fresh for each meal naturally! We'll finish the meal with a few bottles of Hennessy Cognac Richard, retire to the den and wonder what the hell the poor people are doing tonite!!!

Tonight was a Bison Roast, pan seered in bacon fat, cooked at 275 degrees for 4 hrs with Baked potato(& real bacon), ceasar salad and carrots on the side....mmmmm was it ever delicious.

I'm really not a Yorkie afficinado...:razz:

I hardly ever make them, and I am sure there are plenty of grandmothers out there that do a better job than I do. But what I do is take a frying pan, and heat it up in the oven.

If I am making a beef roast or I have some beef fat available I woudl have rendered it into lard, other wise I use vegetable or grape seed oil.

Put the oil in the pan and wait until everything is just about to smoke and pour in the batter and get in the oven fast!:razz:

Just like making regular yorkies, except when you use a 6" pan, it fits onthe bottom of a plate and you can pile up stuff on it, and it looks cool.;)

Here is a better pic of the pudding. You want some "loft" in them. Trick is they have to rise before "skinning over" on the top. Otherwise they will be flat liek pancake!

That Yorkie is amazing. I usually make them in muffin pans in lots. Great presentation Gatehouse. Looks like a great meal.

We had crab and prawns with perogies and Cesaer salad tonight. Went crabbing and prawing today and got 8 dungees and about 160 prawns. We sampled some for din din and freezed the rest.

Sent the pic to my wife as a dinner suggestion for tomorrow - no gravy though but maybe with some cranberry or apple sauce on the side. Sprinkle of thyme on the jams, mmm once again, I should not look at this thread late at night, now hungry again (think there is a jar of apple sauce in the fridge...).

that meal looks amazing - thanks for sharing - I like the idea for the big york - will have to try it (last time I made yorks, Peter ate 13 of them so maybe a big one will make him happy :))

Last night the lovely Lady took a stab at my Venison Back loin, pan seared to get it all nice and browned and seal in the juices a bit better, added good old sea salt and cracked pepper, tossed it in the oven for a while with baked potatoes on the rack, served it up with some steamed Broccoli and meat reduction sauce on the meat and potatoes.
Simple but so tasty, she did a great job, I didn't have to lift a finger, don't tell her I said that last part or I'll be cooking this evening.:tongue:

Oh I'm busted, I left the screen up so I am cooking tonight after all, frozen lasagna it is.

Last night was veal cutlets ( hand raised by me, milk fed and darn good)with chanterelle mushroom cream sauce, wine braised green beans and fennel and dilled mashed potatoes with a few slices of beets added ( makes them pink for Valentines).:biggrin: Accompanied by Valpolicella. Dessert was amaretto and ladyfingers.

Tonight I'm feelin' uninspired so I haven't decided yet. Likely homemade pizza or venison sausages.

I had two small packs of deer steaks to use up one blacktail and one whitetail. So I made up a batch of pepper steak. Not bad when you can feed five with just two Bucks.:smile:

Still eating snow goose from 2007.

Roasted one last night stuffed with apples and surrounded by chestnuts. Served with green salad, shredded celeriac salad, red cabbage and potatoes.

Ended up only eating the legs so it is leftovers tonight. That is the breast meat and the rest.

Beef sirloin tip roast-medium rare. Roasted baby carrots, beets, parsnips with small onions, garlic cloves, olive oil, white balsamic and thyme. Not sure if doing mashed or scallop potatoes and may even try the huge Yorkshire in the pan like Gatehouse does.
I'm so busy getting supper ready while dealing with the kids I never have time for pics. I will try my best tonight :)

Ok, we just finished cutting up our Cow elk. I put aside some sirloin from the first hind qaurter and marinated it in my vacuum marinator.
I bar-b-q'd the steaks rare. Pan fried some onions. set the onions aside deglazed the pan with red wine and marinade and reduced.
meanwhile i sliced the steak thin layered it onto a sliced bagette. Topped the steak with onions and reduction. Then i finished it off with swiss cheese and broiled it until brown and bubbly.

It was awsome ad incredibly tender considering the Elk has'nt aged at all.

tonight was, and I repeat, was - marinated, boneless lamb roast with steamed cauli and broccoli. I sipped a full bodied chardonnay with the meal.

The lamb was marinated in a simple olive oil, soya sauce, garlic, fresh rosemary and fresh cracked pepper marinade.

I got marinated in chardonnay...

Moose roast - cooked in Hermann's dark lagre vancouver island beer marinade with shallots, garlic, juniper berries and bay leaves

pulled out the old yorkshire pudding recipe (not as fancy as Clarkes but still yummy)

roasted potatoes, carrots, portabello mushrooms and fancy gravy

Started with soft pretzel sticks and balsamic/olive oil dip. Followed by fresh ling cod and scallops both pan seared and then topped with fine chopped bacon, onions and panko crumbs. Accompanied by a simple green salad with marinated red peppers, olives and red onion. It was very yum.

The Girl kept saying "mmmmm....mmmm....so good...mmm...."

I keep forgetting to use the camera before I use my fork! I did a venison heart on the Bar-B the other night. Gave it a light marinade first and grilled it to a medium rare done-ness. Had it with some raw veggie salad and an orzo pasta salad. Taaaasty!

I got a whole bunch of garlic scapes form my sous chef...Took them home and made a marinade for some moose filet with them and some lemon juice, olive oil and tamari.

I then put a bit of butter and water and put some chopped up scapes in the pan wiht them, and set that to reduce and infuse.

Cooked up a bunch of fresh from the dirt new potatoes, grilled the moose, tossed some more scapes in olive oil and grilled those, too.

When it all came together I took the garlic scape infused butter and poured half of it on the potatoes, and then added lemon juice to the rest. I had ben given a whole dungeness crab (already cooked) by one of the servers, so we sat down and had the crab for an appy, then jumped into the grilled moose steak, new potatoes and grilled garlic scapes....

What's a garlic scape? Greens?
What's in the lemon caper sauce? I need more recipies to flavour bland bottomfish(halibut,sole,ect...) other than breading & frying.

Backtail loins, Rabbit, and a couple chicken boobs. Rubed the loins and rabbit with some herbs and spices, then let then sit in the fridge from morning until Q-time. The venison was awesome. The rabbit was tough - although the loins that I'd boned out were good, but the thighs, legs, and shoulders were tough.

Next bunnie is going in the pot for a few hours....or at least wrapped in foil and done slooowwly.

Take a few pieces of bread and top them with some pre-cooked crab meat (down to my last package) small diced tomatoes, small diced green onion, some spices of your liking and top off with shredded provolone cheese. Bake at 450 for about 12 minutes or until the cheese is golden brown. Simple and delicious:grin:.

Good with soup of your choice (which we did tonight) or just as a snack on there own.

I have to go crabbin now cause they were real good and I'm out!

A couple grouse breasts, marinated in bbq sauce for 24hrs, then spread lightly with garlic powder, paprika, pepper, cayenne and mustard powder. Then on each side of the breast halves, a slice of havarti, then wrapped in bacon, and cooked in the oven. Having not done this before (exactly), I'm going to try 400* for 15 or so mins and see how they come out. T-minus six minutes!!!

I usually sweat a little fine chopped onion and garlic, then add the quinoa and toast that a bit, then add 2 parts liquid (in this case duck stock) to one part quinoa, bring to boil, cover reduce hat simmer about 20 minutes until done.

I have done it with ground venison, lamb or beef, but in this case it's just onions, garlic, red peppers and tomatoes and hrbs, topped with goats milk feta

Cook all the filling in a pan, put in the hollowed out zukes and top with cheese, bake

Cubes of Queen Charlotte halibut crusted in corn meal and zata'ar spice which were quick fried in Olive and Canola oils and served with a fresh made Pebre sauce from Argentina, complemented with steamed young asparagus spears drizzled in fresh lemon juice and topped with a pat of butter.
The carbs were covered by PEI smashed potatoes with lotsa butter and fresh ground pepper.
Served with a dusting of ground red pepper and a nice glass of St Ambroise Apricot beer, for a global culinary treat.

Cowichan Lake trout tonight, with steamed asparagus, "new" potatoes, and a tasty little Chablis to wash the mess down with. Plus a couple of multi-grain dinner rolls (I'm a bread-a-holic).

I gotta go cook it now - so pic(s) a bit later if I remember the camera before the fork!

Yours looks awesome too, Gates. The halibut tasted great as well! That Pebre sauce is a winner. I think I might play with it a bit though, and add some mango or peach for a little sweetness to balance the tartness of the vinegar and chiles.
By the time I realized i could have plated and photo'd it better, it was already in my belly! lol
There will be lots more tho....no worries about that.
Tomm I'll make a nice elk stew in the slow cooker.

Good idea I should make an apple crisp.:-D I wish I could have the 4 alarm chili the wife and kids dont appreciate the fuller flavour of spice. Well off to make some apple crisp.
