I found a good recipe for bear jerky.

10 lbs bear meat
2 cup soy sauce
1 cup worstershire sauce
4 Tbs pickeling salt
1/2 cup brown sugar
2 Tbs liquid smoke
2 Tbs pickling spices
1 tsp "death sauce" (or any hot sauce)

mix all ingredients and simer over low heat, add bear meat and put in the oven at 200F for 30mins or untill internal temp reaches 200F.
cool and put in fridge overnight.
Put in smoker with favorite chips and slow cure for one day,
