surprising to see the cholesterol levels of the wild meat, I thought they'd be lower.

Nope, but wild animals have much higher "good fats" than beef. Cancel out the bad stuff (at least that's what I tell myself with my 2-steaks-a-day diet). :)

There is actually a debate going on whether eating food that is high in cholesterol has much of an effect on your own bad cholesterol levels. Apparently like anything else to do with health and diet, it simply isn't that simple.

Cholesterol has a bad rap but by itself or in combination with the good fats such as monounsaturated fat and/or polyunsaturated fats it is not bad. What makes it bad is the combination with saturated fats and/or trans fats.

read an article on a 2 year study of the atkins diet, mediteranian diet and south beach diet and they found that the atkins diet was the most effective at lowering overall cholesterol and also the most effective at bringing the good cholesterol levels up.

My father had a friend who told us (dead seriously) one time that deer meat was nice for a taste of something different once in a while but game meat had no nutritional value in it at all.

Of course this guy was fond of white bread, greasy food and sugar, got diabetes, lost a leg and died.
