I don't have a pic but I take three cornish game hens and stuff them each with a garlic clove, a quarter of an onion and a jalapeno pepper or similar pepper. They nest well in my 12" lodge DO and then I liberally powder them with a poultry seasoning.
Place about 1 cup of chicken stock in the DO and then smother with more onions and whole chili peppers or anahiem peppers and put it in the coals
or briquets with some on the lid for an hour and meanwhile make some rice and serve it all with a hearty bread and you've got braised pollo al pimiento!


I forgot but sometimes I make a whole wheat dumpling mix and place them on the birds for the last 20 mins of cooking.

You can pass on the bread and rice that way.
