Just wondering if any you guys have some good jerky reciepies I planning on making some jerky out of some moose and deer this week end. I will be using a dehydrator not the oven or a smoker if that makes a difference.

I have done it in an oven...........usually around 150 maybe a little lower depending on the thickness of the strips. l also use four racks with the bottom one covered with tin foil to keep the drippings from making a mess, and it gives a more even heat. Takes 3-4 hours, again depending on the thickness of meat.........don't over cook, tastes way better a little moist rather then on the dry side.

Use the recipe in the recipe book from the Luhr-Jensen Big Chief or Little Chief Smoker. If you don't have it go to your local sports shop and ask them if you can have a look at the recipe book.
