I've been trying to find a nice wild turkey recipe, but to no avail. I guess it's a no-brainer or those Americans won't tell. So just to keep my mind and fingers busy, here's a woodchuck/groundhog one I noticed in the F-F-G magazine and just for those who would give it a try.

Dress one young woodchuck - 3 to 4 pounds.
Remove glands from under legs and as much of the clear membrane that covers the meat as possible.
Dust with flour, salt and pepper.
Place in a plastic oven bag with onions and a little water.
Bake at 325 degrees for 2 to 2.5 hours.

And no - it doesn't taste like chicken, more like the dark meat of turkey.
