Saturday was pepperonie day, a buddy of mine brought over some deer along with my bear and moose we started at it. we used 20% pork butts in the mix, we had all of our seasonings from Stuffers or Rymac. Three hours to get it all stuffed, Four hours of smoke and put the heat on untill we had an internal meat temp of 170 degrees, man is it goooood! :lol: Was going to freeze this batch, but the kids have different ideas:wink:. turned out really well, looking forward to to doing the next batch.
